Icewine

Ice wine is a unique and rare Canadian specialty. It is world-famous. It is the best wine in the world. Because the real ice wine not only needs high-quality grape varieties and very strict brewing technology, but also depends on weather factors and timing, and its juice yield is very low. (Usually about 8 kilograms of grapes can produce a bottle of 375 ml ice wine, but usually only one kilogram of grapes can produce a bottle of 750 mL wine.) Such ice wine is of course precious. Ice wine grapes were fully ripe in October, covered with a protective net and left intact on the vines until the first freezing period of winter in Canada. During this period, grapes are dehydrated naturally, which concentrates the flavor, aroma, sugar and acidity of grape juice.

In December and January in Canada, grapes were frozen to solid at temperatures below 10 C, which greatly increased the difficulty of manual harvesting and pressing. Concentrated grape juice yields only a fifth of the normal yield, because most of the water is precipitated in the form of ice crystals during the pressing process.
